Spring flowers always mean a transition period. There's new growth, new energy, and big changes are happening! Spring time also always has me craving fresh leafy greens and veggies. I am so excited to have time this summer to make my garden produce a lot of food!
Mark the date: April 19th, we have our first harvest! (gotta love Vancouver weather)
So in honour of our first pick (a single radish), we decided to make a big ol' salad for dinner, with a dressing inspired by a salad I had at Sweet Cherubim today.
Salad:
1 Spinach bunch
4 leaves of Kale
1 Tomato
1 carrot, shredded
1 Honorary Radish, shredded!
1 pack of Tempeh, heated in frying pan with Braggs and Broccoli
Dressing:
1/4 Cup sesame seeds
4 Tbs sesame oil
2 Tbs Braggs
Juice of 1/2 a lemon
1 tsp Apple cider vinagre
1 clove garlic
1/2 carrot
1/2 cup water
Blend in Vitamix and drizzle over salad !
